Spinach Pate

Ingredients

  • 300g frozen spinach

  • 50g can flat anchovies, undrained

  • 60g butter

  • 1 clove garlic, crushed

  • 1 onion, finely chopped

  • Salt & pepper

  • ¼ teaspoon mixed herbs

  • 60g butter, softened

  • 3 hard-boiled eggs

Directions

  • Cook spinach and drain well
  • Melt butter in frying pan and sauté onion over low heat
  • Add herbs, cook until onion is soft
  • Puree spinach, onion mixture, eggs, anchovies pus oil in blender
  • Mix in garlic, salt and pepper and butter
  • Blend well and leave to set in small covered containers
  • Keep three days in refrigerator
