Ingredients
300g frozen spinach
50g can flat anchovies, undrained
60g butter
1 clove garlic, crushed
1 onion, finely chopped
Salt & pepper
¼ teaspoon mixed herbs
60g butter, softened
3 hard-boiled eggs
Directions
- Cook spinach and drain well
- Melt butter in frying pan and sauté onion over low heat
- Add herbs, cook until onion is soft
- Puree spinach, onion mixture, eggs, anchovies pus oil in blender
- Mix in garlic, salt and pepper and butter
- Blend well and leave to set in small covered containers
- Keep three days in refrigerator
