Ingredients
1 Cup Self Raising Flour
4 tablespoons castor sugar
½ teaspoon salt
1 tablespoon cinnamon
1 egg
1 teaspoon grated orange rind
2 tablespoons melted shortening
2 bananas
3 tablespoons milk
Directions
- Sift flour and salt, add ½ of the sugar
- Beat egg with milk, add melted butter and fold into flour mixture
- Place in tin (6’’ square cake tin) and top with sliced bananas
- Mix remainder of sugar with cinnamon and orange rind and sprinkle over bananas
- Bake at 190° for 30 mins
