Spiced Banana Pudding

Ingredients

  • 1 Cup Self Raising Flour

  • 4 tablespoons castor sugar

  • ½ teaspoon salt

  • 1 tablespoon cinnamon

  • 1 egg

  • 1 teaspoon grated orange rind

  • 2 tablespoons melted shortening

  • 2 bananas

  • 3 tablespoons milk

Directions

  • Sift flour and salt, add ½ of the sugar
  • Beat egg with milk, add melted butter and fold into flour mixture
  • Place in tin (6’’ square cake tin) and top with sliced bananas
  • Mix remainder of sugar with cinnamon and orange rind and sprinkle over bananas
  • Bake at 190° for 30 mins

Meat Loaf

Ingredients

  • 500g minced steak

  • ½ packet dried onion soup mix

  • 225g ricotta cheese

  • 2 rashes of bacon, chopped

Directions

  • Mix all ingredients until cheese is absorbed into meat
  • Place into grease meat loaf tin
  • Bake at 180° for 1¼ hours

Apple Shortcake

Ingredients

  • 225g butter

  • ¼ cup sugar

  • 1 egg

  • 1½ cups plain flour

  • 1 teaspoon baking powder

  • Cold stewed apple

Directions

  • Cream butter and sugar
  • Add egg and cream well again
  • Add plain flour & baking powder sifted together
  • Roll out
  • Use half pastry to line a greased sandwich tin
  • Fill with apple and cover with remaining pastry
  • Bake at 180° until golden brown

Vegetarian Potato Kugel

Ingredients

  • 3 medium potatoes

  • 2 small carrots

  • 1 small onion

  • 1 clove garlic

  • 1 egg

  • 1 tablespoon oil

  • 2 tablespoons chopped parsley

  • 2 tablespoons whole meal breadcrumbs

  • ½ cup milk powder

  • ½ cup grated tasty cheese

  • 15g butter

  • ½ cup plain yoghurt

  • 2 shallots

Directions

  • Grate potatoes, carrots and onions, combine with crushed garlic
  • Lightly beat egg with oil, pour over grated vegetables, stir in chopped parsley, breadcrumbs and milk powder
  • Spread into well-greased pie dish (base measures 20cm), dot with butter, bake in moderate oven 30 minutes, sprinkle with cheese, bake further 15 minutes
  • Serve hot or cold topped with combined yoghurt and chopped shallots

Crunchy Vegetable Flan

Ingredients

  • ½ x 250g Packet Sesame Biscuits

  • ½ Cup Wheatgerm

  • 125g Butter

  • 1 Onion

  • 250g Zucchini

  • 185g Mushrooms

  • 1 Teaspoon Dried Marjoram

  • ¼ Teaspoon Dried Tarragon Leaves

  • 1 Cup Grated Cheddar Cheese

  • ½ Cup Grated Parmesan Cheese

  • 2 Eggs

  • ⅓ Cup Milk

  • 1 Tomato

  • Salt and pepper

Directions

  • Crush biscuits finely, mix with ¼ cup of the wheat germ and 90g of the melted butter
  • Press over sides and base of 23cm flan tin
  • Bake in moderately hot oven 8 minutes or until golden brown
  • Remove from oven and set aside
  • Peel and slice onion, chop zucchini, slice mushrooms
  • Cook in remaining butter until tender, about 3 minutes
  • Mix in remaining wheatgerm, salt pepper, marjoram and tarragon
  • Turn half the filling into crumb shell
  • Sprinkle with half the cheeses
  • Top with remaining vegetable mixture
  • Beat eggs with milk’ pour into center of vegetable mixture
  • Arrange slices of tomato on top of vegetables, sprinkle with remaining cheeses
  • Bake in moderate oven 30 minutes or until set

Porcupines

Ingredients

  • 500g Minced Steak

  • ¼ Cup Grated Onion

  • 2 Tablespoons Oil

  • ½ Cup Uncooked White Rice

  • 1 Can Tomato Soup

  • ½ Cup Water

  • Salt and Pepper

  • Flour

Directions

  • Mix steak, onion, rice, salt and pepper
  • Form into small balls, roll in flour, fry in hot oil until light brown on all sides
  • Mix soup and water, pour over balls, cover and simmer about 45 mins or until rice is tender

Meatball Mexicana

Ingredients

  • 500g Minced Steak

  • 1 Can Tomato Soup

  • 2 Tablespoons Butter

  • 4 Rashers Bacon, diced

  • ½ Cup Water

  • 1 Teaspoon Chili Powder

  • 1 Onion, chopped

  • ½ Teaspoon Salt

  • ½ Cup Green Pepper Strips

  • 125g Cooked Macaroni

  • 1 Can Red Kidney Beans

  • Salt and pepper

Directions

  • Melt butter and cook bacon until crisp, drain on paper
  • Combine minced steak, salt and pepper and shape into twenty balls
  • Sauté in bacon fat until browned
  • Place meat balls in buttered casserole dish
  • Add onion and pepper to pan and cook 3-4 minutes
  • Stir in undrained kidney beans, soup, water, chili powder, salt and cooked macaroni
  • Pour over meat balls in casserole, top with bacon and cook ¾ to 1 hour

Chili Con Carne

Ingredients

  • 500g Minced Steak

  • 4 Tablespoons Tomato Sauce

  • 2 Tablespoons Oil

  • ⅟₄ Teaspoon Chili Powder

  • 1 Onion, chopped

  • 1 Can Red Kidney Beans

  • 1 Teaspoon Salt

  • 1 Tablespoon Vinegar

Directions

  • Fry minced steak in oil until lightly browned
  • Add other ingredients and simmer for 10-15 mins
  • Add kidney beans and simmer another 10 mins
  • Good with rice, tossed salad and French bread

African Curry

Ingredients

  • 750g minced steak

  • ½ Cup Sultanas

  • 1 Large Potato, sliced

  • ⅟₄ Chopped Almonds

  • 1 Large Cooking Apple, sliced

  • Salt

  • 1 large Onion, sliced

  • 1 Teaspoon Sugar

  • 2 Tablespoons Oil

  • ½ Cup Apricot Jam

  • 2 Teaspoons Curry Powder

  • 4 Bananas

  • ½ Teaspoon Turmeric

  • 1 Egg, beaten

  • ½ Cup Vinegar

  • ½ Cup Milk

Directions

  • Brown meat, potato, apple and onion in hot oil, add curry powder and turmeric and stir well
  • Add vinegar, cover, and simmer very gently about 30 mins or until cooked
  • Add sultanas, almonds, salt and sugar
  • Stir well and put in shallow casserole dish
  • Spread jam thinly over top
  • Cut bananas in halves lengthwise and place on jam
  • Mix egg and milk and bake at 180° for about 30 mins or until browned

Peppers Stuffed With Minced Steak

Ingredients

  • 4 green peppers

  • ½ cup chopped raisins

  • 500g minced steak

  • 1 onion, chopped

  • 1 tablespoon oil

  • Salt and pepper

Directions

  • Put peppers in small saucepan, cover with cold water, boil 5 mins
  • Remove, halve lengthwise and drain well
  • Place in shallow baking dish
  • Cook meat and onion in hot oil until browned
  • Add raisins, salt and pepper
  • Mix well and fill peppers
  • Bake at 180° about 30 mins
